Tried everything to make your lil fussy eater finish their meals? I know how it feels. With two kids who have different tastes and demands, I keep on experimenting with different snacks recipes which are not only healthy and yummy but keeps kids full for long as well. These can be prepared easily and mommies can enjoy them as well.
1. Go bananas with Caramalised Banana
Caramalised Banana is the the perfect quick snack which gets ready in a giffy. It is a treat on its own and it even makes any dessert extra delicious when topped with them. These act as great topping for waffles, pancakes and even sandwiches.
Ingredients:
🍌 2 banana
🍌 1 tablespoon butter
🍌 Sessame seeds, Chia seeds, Honey, Crushed peanuts, Powdered almonds,cashews, pistachio( for seasoning according to liking)
Method:
1. Slice the bananas into circles.
2. In a pan, heat butter on medium flame.
3. Once the butter melts, add the banana slices and cook them light to medium brown on both sides. Be gentle while flipping the banana slices to that it doesn’t break.
4. Take it off the flame and season it with any of toppings according to liking. Sessame seeds, chia seeds, honey, crushed peanuts and powdered almonds, cashews and pistachio go well with caramalised banana.
5. Use the seasoned caramalised banana as topping on waffles, panacakes or sandwiches.
As delicious as they taste, they even make the whole house smell heavenly. Kids love eating them as is and they can be even paired with yogurt or can be topped on waffles, toasts and pancakes to make them extra yummy. A perfect snack for when you have a hungry fussy eater refusing to eat anything.
2. Macaroni but make it Indian
A scintillating combination of Italian macaroni with desi Indian spices resulting into a drool worthy 4pm snack. Prepared with narrow elbow shaped pasta, this simple dish is wholesome and piquant at the same time.
Ingredients:
🍴1 table spoon oil
🍴1 table spoon butter
🍴2 cloves of chopped garlic
🍴1/2 medium sized onion chopped
🍴1/2 small carrot chopped
🍴1 table spoon peas
🍴1/2 small green clilli finely chopped
🍴1 slice each of red & yellow bell peppers chopped
🍴1 cup boiled macaroni pasta
🍴1 table spoon tomato ketchup
🍴A pinch of turmeric powder, garam masala powder & jeera powder
🍴Salt to taste.
Method:
1. In a pan, heat oil and butter.
2. Saute garlic and onion into it for 10 seconds and add carrots, peas and green chilli. Add salt and cover the pan with a lid and let it cook till vegetables start getting mushy.
3. Add red & yellow bell peppers, turmeric powder, jeera powder and garam masala. Give a good stir so that all the vegetables are coated with the spices. Cover it again and cook for 2 minutes.
4. Add in boiled macaroni and mix everything nicely.
5. Finally, add tomato ketchup and give it a good stir while letting it cook for 2-3 minutes.
This instant soul satisfying is the perfect snack your kids will never say no to.Dig in it while its piping hot and enjoy the burst of desi spices mixed in sultry soft macaroni pasta.
3. The Monster Green Balls
Cauliflower and spinach mixed with spices and herbs combined with chickpea flour works wonderfully for those hunger pangs. Cauliflower and spinach gives it a unique flavor and texture.
Ingredients:
🥬1/2 cup cauliflower florets
🥬 1 medium sized potato
🥬1/4 cup finely chopped spinach
🥬1 tablespoon rice flour
🥬2 tablespoon chickpea flour/besan
🥬1 green chilli finely chopped
🥬1/2 medium sized onion finely chopped(optional)
🥬A pinch of red chilli powder, garam masala powder, cumin powder, chaat masala,dry mango/aamchur powder
🥬Salt to taste
🥬Oil
🥬Water
Method:
1. In a medium sized saucepan, add water and insert a steamer. Add cauliflower florets & potato and cover with lid. Let it steam for 10-15 minutes untill the cauliflower and potato is fork tender.
2. Once cooked, finely chop the cauliflower(you can grind it as well).
3. In a bowl, add the cooked potato and mash it. Add in chopped cauliflower, spinach , rice flour, chickpea flour, green chilli and onion.
4. Season it with salt, red chilli powder, cumin powder, garam masala powder, chaat masala and aamchur powder and mix everything.
5. Shape it in small flat kebabs or tikkis and shallow fry them on medium heat untill golden brown on both sides.You can cook it in airfryer or microwave as well.
Serve these healthy nutritious kebabs hot with ketchup and mint chutney. To make it interesting, you can even roll them up in a chapati and make it like a sub with dressing of tomato ketchup and mayo.
